A Future Rich in Nutrients - Where Soil Life, Crop Quality and Human Health Intersect
2-Day Workshop and Training with an International Master of Nutrient-Dense Farming
Dan Kittredge in Hungary!
In-Person Workshop:
October 9–10, 2025 | 9:00 AM – 5:00 PM
MATE Szarvasfarm – 7475 Bőszénfa, Malom u. 3.
Held in English with Hungarian interpretation.
+ 9-part ONLINE course:
You’ll get immediate access to the full course content after confirming your registration.
Language: English with Hungarian subtitles.
What does it take for produce to be not just high-yield, but truly nutrient-dense?
And how can an agricultural system come back to life—not just in terms of soil, but in nutritional quality too?
More and more of us are sensing that something’s missing from our food. It looks perfect but lacks flavor. It’s impressive but not nourishing.
Anyone who has tried growing real, life-giving food – whether in their backyard or on a farm – knows that producing nutrient-dense crops is not just a technique.
It’s a form of art.
A truly healthy plant doesn’t just survive — it thrives. It resists disease, pests, and stress, and at the same time, it delivers real nutritional value.
Vitality and nutrient density aren’t separate goals — they’re two sides of the same coin. And they both come from the same source: a living, dynamic system. That’s what creates food with true quality — something you can see, taste, and even measure.
But getting there isn’t just about technique.
It takes a different way of thinking.
An approach rooted in respect for nature — not trying to control it, but working with it, supporting its own intelligent design.
And the good news? You can learn how.
Now, for the first time in Hungary, you can spend two full days learning from Dan Kittredge, founder of the Bionutrient Food Association, who has spent the past 30 years helping people around the world rediscover what true food quality means – richness in flavor, nutrition, and vitality.
This workshop is for you if you:
Are no longer satisfied with superficial solutions,
Want to grow real food for yourself, your family, or your community,
As a farmer, nutritionist or ecologist, want to understand the deeper system behind food quality – the connection between soil life, plants, flavor and nutrient content.
What will you learn in this 2-day workshop?
This training doesn’t just offer “recipes” – it provides a new perspective, a systems-based way of thinking, and practical tools to help you fundamentally reframe how you approach plant cultivation, nutrition, and soil life.
Over the course of the two days live workshop, you will learn:
How does a living system actually work?
We’ll explore why plant responses to external inputs are not mechanical – and how environmental context, enzymatic activity, biological relationships, and soil life all play a key role in the final outcome.
What determines the nutrient content of plants?
What’s the difference between yield and true quality? How does this relate to the microbiome, nutrient uptake efficiency, and the living soil?
How can you recognize when a system begins to regenerate?
You’ll learn the practical signs that show when soil, plants, and ecosystems are coming back to life.
Why is taste one of the best indicators of nutrient density?
You’ll discover how taste perception and simple content testing tools can be used on the farm as real-time quality indicators.
How can we produce better quality food with fewer inputs?
You’ll be introduced to an approach where deeper systems knowledge – not more fertilizers or chemicals – leads to better outcomes in soil, plant vitality, flavor, and food value.
What role do enzymes, microorganisms, and plant communication play?
You’ll understand how nature “thinks” – and how to cooperate with it, rather than fight against it.
What is nutrient-dense farming – and why is it the future?
You’ll gain a new mindset that connects agriculture, human health, and the sensory experience of food.
You’ll also learn in the course:
How seed quality and microbial inoculation lay the foundation for system health
How to use Brix levels and soil conductivity for in-season monitoring
What is the role of micronutrients and mineral balance — and how can we effectively restore them?
Why long-term solutions come from biological balance, not chemical pesticides
How plants, fungi, bacteria, and animals function together in a self-regulating living system
What biological agriculture really means – and how it can be implemented in any context or scale

2025 Western Australia GROUNDED Festival
See Dan Kittredge at GROUNDED 2025!

Inspired by Groundswell in the UK, and run with their blessing, GROUNDED is reimagining farmer learning by running multiple talks and demonstrations on farm, for farmers and those interested in food systems, soil and even gardening, organised by people with skin in the game. Think good food stalls, good company, and cracking sessions, with a bit of music thrown in.

Regenerative Food Systems Conference 2025
Regenerative Food Systems: Collective responsibility for soil health, human wellbeing & food security.
Our environment, food security, and public health are inseparable, yet they are often addressed in isolation, leading to deteriorating ecosystems and declining human health. This fragmentation is hindering real progress in the face of urgent global issues like climate change, food insecurity, poor public health outcomes, and a disconnection from the systems that sustain us.
This conference will provide a comprehensive exploration of our food systems – tracing the journey from food production to its environmental impact, and how the quality of food directly influences our health. Together, we will address the pressing challenges faced by farmers and our food system, while identifying the key changes needed to future-proof the system for a sustainable and healthier future.

HOW TO MEASURE NUTRITIONAL QUALITY
Join us for a Saturday morning workshop at the Rockies (150 Marginal St, East Boston) with Dan Kittredge, founder of the Bionutrient Food Association, to learn how to measure the nutritional quality of fruits and vegetables.
Dan will demonstrate how BRIX scores—an indicator of sugar and mineral content—relate to flavor, freshness, and the health of the soil they’re grown in.
This hands-on session will change the way you think about food quality and offer practical tools for growers and eaters alike. You'll come away with new insights into the relationship between soil and nutrition. A community lunch will follow—RSVP to save your spot!

Symposium 'Bodem als basis voor gezondheid'
Symposium 'Soil as a basis for health'
The scientific link between soil, food and health
The disease burden of chronic lifestyle diseases costs Europe more than 700 billion euros per year. In addition to this already enormous financial pressure, the RIVM expects that the number of people with one or more chronic diseases in the Netherlands will increase sharply - from 1.5 to almost 12 million in 2050 (Public Health Future Exploration 2024).
One of the most important risk factors for chronic disease is our diet. Not only the food choices we make, but also the quality of the food plays a role in this. Research increasingly shows that the soil microbiome is closely linked to the human intestinal microbiome. In this symposium we therefore explore the connection between agricultural methods, soil vitality, food quality and human health.
What has research shown so far? What is currently being worked on? How can we apply these new insights and how do we bring them to the people? And, last but not least: how would that be financed?

The Science of Taste: How Nature Builds Flavour and Health
Farmacy presents an evening with Dan Kittredge, founder of the Bionutrient Institute.
Join us to sharpen your understanding of the foundations of nature and how human and plant nutrition are inextricably linked. This exclusive event offers a rare opportunity to engage with Dan, who typically resides in Maine, USA, in a community setting conducive to learning and inspiration.
Delicious bites will be offered by Farmacy.
What if we told you that nutrient-dense crops are the byproducts of well functioning biological systems? That the effect of flavourful food is health? That nutrient density isn’t connected to farm size, variety or climate — but is tightly linked to another variable? That climate change is a plant life problem?
Dan Kittredge, founder of the Bionutrient Institute, is on a mission to increase quality in the food supply.
Beginning his career as an organic farmer 30 years ago, Dan sought to understand the plants he grew from first principles. Scrutinising the most fundamental elements of biological systems, Kittredge asked at every step, “How did nature evolve things to work?” His enquiry led him away from conventional organic wisdom and towards a relentless insistence on deep nutrition and the bottom of the food chain — focusing on raising microbes over plants or animals. The sweeping vision he developed allows us to understand health in soil, plant, humanity and planet by the same scientific principles
Dan Kittredge will be introduced by Patrick Holden, founder and CEO of the Sustainable Food Trust, and Aurora Solá, Farmacy’s director of cultural impact.
This event is open to professionals and general audiences. No specialist knowledge is required to attend and participate.

The solution beneath our feet – how connecting soil health, plant health and human health can transform our food system
Farmer and holistic systems-thinker Dan Kittredge is making it his life’s work to increase the nutritional quality of the food we grow and eat. For the past 30 years Dan has been farming organically in Massachusetts and since 2010, as founder and chief executive of the Bionutrient Food Association, coordinating cutting-edge research into plant nutrient density.
Dan will delve into the practicalities of revitalising our land to create the conditions in which our plants’ microbiomes – and in turn our own gut biome – can flourish. He will share his vision of how we can do so at scale and, in so doing, reverse chronic disease while sequestering consequential amounts of carbon. He will also reveal highlights from the open-source work he has been engaged in to empower consumer choice and build transparency in the food system.
Whether you’re a farmer, market gardener, a domestic or armchair gardener you will go away inspired with a keener understanding of the intricate interplay between soil health, plant vitality and human wellbeing. There will be plenty of time for questions at the end so come and join the conversation!

Living Land Conference
Don't miss the most important event about regenerative agriculture in the Czech Republic!
Regenerative agriculture is successfully making its way to Czech fields and pastures. What positive effects does it have on our landscape? And how does it contribute to the fight against drought and the decline of diversity? The Living Landscape conference will offer a space for the exchange of experiences and in-depth debate for the fourth time, and will bring the latest scientific findings from Czech and foreign practice.
This year, for the first time, the conference program brings the topic of the nutritional value of foods from regenerative production. We are asking ourselves what influence microbial life in the soil has on the quality of cultivated crops and the nutritional value of what we commonly eat. We are also interested in whether the approach to farming is changing quickly enough, what current challenges regenerative farmers face, and what new legislation has in store for them. Join the conference in January 2025 and...
Take a step towards profitable, yet economical farming!
You can participate in person or online to get valuable answers and inspiration.

TMG REAG 8. Soil Life Conference and Exhibition
What does TMG REAG VIII Soil Life Conference and Exhibition mean?
This will be the 8th year that TMG, the Soil Renewal Farmers' Association, will organise its conference on regenerative agriculture (REAG is the acronym for 'regenerative agriculture'), and as the number of participants has grown exponentially every year, we thought big and created the first Central European regenerative conference and exhibition, which will not only provide professional knowledge on soil life, but also sustainable gastronomy. This event is unique in Central Europe in this field.
The event will feature exciting and colourful presentations from successful practising farmers, innovative researchers and experts in soil regeneration from both national and international fields. There will also be a large-scale machinery exhibition where you can see cutting-edge technology related to regenerative agriculture. During the direct seeding demonstration, several manufacturers will showcase their machines on a blanket plant table on site.
And for those interested in sustainable gastronomy, there will be lectures and workshops on fermentation, sourdough, pulses - everything that goes into environmentally conscious eating.
What is the purpose of the event?
By demonstrating regenerative agriculture, we want to show farmers the way to a sustainable and profitable agriculture. After all, the vision of our association is to make the Carpathian Basin green in winter and summer!
We believe that only healthy soil can grow healthy food. The aim of our association is to spread knowledge about sustainable gastronomy in the Carpathian Basin, so that the health of families is a priority alongside soil health.
We want to show that there is life without ploughing, and what life is like! There is a way of growing crops without ploughing, and we will explain the theoretical and practical elements of this in detail. For many people, in very large areas, the question of how to survive in adverse conditions is a vital one. Many people also want to take steps to live healthy and fulfilling lives, and a fundamental reform of their nutritional routine is an essential part of this.

In Conversation with Dan Kittredge
Join Soils for Life, Open Food Network, Sustainable Table and Regen Melbourne for a compelling conversation exploring the essential links between soil health, food systems, and public health. Dan Kittredge, a pioneering voice in regenerative agriculture from the United States, will discuss how farming practices impact both our environment and the nutrients we are consuming. Learn about groundbreaking innovations from the Bionutrient Institute that are increasing transparency and understanding of our food's nutritional content. This session offers valuable insights for anyone working in food systems, regenerative farming, environmental action, or public health—helping us build a healthier future for both people and planet.

Out of these efforts was born the Bionutrient Institute, which has engineered a prototype of a hand-held consumer spectrometer designed to test nutrient density at point of purchase. Via the Bionutrient Meter, the goal is to empower consumers to choose for nutrient quality and thereby leverage economic incentives to drive full system regeneration.
This event is in-person only. Please only register if you are able to attend as we have limited capacity, and if your circumstances change please email dheepa@regen.melbourne to free up your ticket for someone else.

Grounded Tasmania
GROUNDED is an annual conference, a field day and a food festival showcasing all the great thinking on how to farm better. The inaugural event is going to be held at our 70-acre mixed farm near Cygnet, south of Hobart, Tasmania, in early December, to coincide with World Soil Day. (If you don’t know the date, there’s no judgement here – but it is the 5th of December.) The event will pave the way for bigger GROUNDED events, including on mainland Australia, run by the same team.

A THREE-DAY EXPERIENCE, A YEAR ROUND ENGAGEMENT PLATFORM
We imagine a world where collaborative effort across sectors leads to innovative solutions that can short-circuit traditional development and adoption timelines. Where clearly conveying the idea, the actions required, and scaling potential through vivid storytelling is critical but not sufficient. We must put ideas in action.
Our anchor event Saturday and Sunday, November 16 + 17, will bring the best and brightest innovators to Boston to activate the MIT campus across three venues: CSAIL Stata Center, the new MIT Museum, and MIT Sloan School of Business. MIT Faculty advisors Daniela Rus, Yet-Ming Chiang, John E. Fernández, and Andrew Lo have joined a special Advisory Board to create a connective tissue across campus.
The conversation continues Monday, November 18, at New England Aquarium where we'll hear Impact Stories from our wider community of innovators.
